I have always loved good food and wine; no surprise really considering that my family have been hoteliers for four generations.

My focus has always been on the fine-dining end of the industry, in a hands-on management role at Michelin Guide level. I started my career in restaurants and hotels in 1982 and have divided my time since then between restaurant management and commercial wine buying.

Mark Slaney Associates has offered informed advice for the fine dining sector of the hospitality industry since 2010.

In November 2018 I opened Condita restaurant, which received a Michelin star less than a year later.
